Like gelatin agar-agar is a traditional gelling stabilising and thickening ingredient but unlike gelatine agar-agar is plant based making it suitable for vegetarians and vegans. Made from seaweed agar-agar has been very hard to locate organically.

Organic Agar-Agar can be used to make jellies mousse glaze for your pastries or thicken a sauce. It is widely used in Asian cuisine and can even set puddings without refrigeration though it is always quicker to use a fridge.

 

Finally there is agar agar that is approved by IFOAM (the global organic certification body) and Watersteps is delighted to bring this Atlantic Ocean sourced super product to Australia and New Zealand. Please note this agar-agar does NOT come from Japan.

How to Use

Really simple!!

Each pack is 2 sachets the instructions below are for 1 sachet only.

The average dose for a good texture is 4g (one sachet) per 1 litre of water.

Then dissolve the agar agar in a cold liquid and bring to the boil.

Leave to cool (best in the fridge) gelling occurs upon cooling.
